To make the crust, start by pulsing biscotti in a food processor until fine crumbs form. Add melted butter and pulse again until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust, then refrigerate for 30 minutes. For the filling, mix together mascarpone cheese and sugar in a large bowl until combined. In a separate bowl, add heavy cream, vanilla extract, almond extract, and salt. Using a hand mixer, blend together until the mixture thickens. Add the mascarpone mixture and fold in. Scoop the filling into the crust in the pan and place it in the refrigerator for at least two hours. Next, double-boil the chocolate until smooth and liquified. Drizzle the chocolate on top of the cheesecake and place it back into the fridge for an additional 30 minutes or until the chocolate hardens. Decorate with raspberries and strawberries and sprinkle powdered sugar on top. Serves 6-8.
