Ingredients
- 12 Bellino Savoiardi Lady Fingers
- 1 cup Heavy Cream
- 1/2 cup Sugar
- 8 oz Mascarpone Cheese
- 1/2 cup Pumpkin Puree
- 1 tsp Vanilla Extract
- 1/2 tsp Nutmeg
- 3/4 cup Ferrara Instant Espresso Coffee, cooled
- 2 tbsp Coffee Liqueur
Directions
In a mixing bowl, whip heavy cream until soft peaks form. In a separate bowl, combine mascarpone, pumpkin puree, sugar, coffee liqueur, vanilla, and nutmeg until smooth. Gently fold the whipped cream into the pumpkin mixture until fully blended and airy. In a shallow dish, stir together the coffee and remaining coffee liqueur. Dip each ladyfinger briefly into the coffee mixture, just until softened. To assemble, spoon a layer of mascarpone cream into the bottom of each glass or a similar 10-ounce dessert cup, followed by a layer of soaked lady fingers. Repeat the layers, finishing with the cream on top. Chill for at least one hour to set. Before serving, sprinkle lightly with nutmeg and crumbled lady fingers. Serves 3.
