Ingredients
- 1 pkg Bellino Savoiardi Lady Fingers (7 oz)
- 3 Large Eggs
- 8 oz Mascarpone Cheese
- 8 tbsp Sugar
- 1 cup Bellino Espresso Ground Coffee, brewed
- 1 oz Powdered Cocoa
Directions
Make cheese mixture by separating egg yolks and reserve egg whites in a separate bowl. Mix yolks with sugar until soft and creamy. While stirring, gradually add mascarpone until smooth. Beat egg whites until stiff, then gently fold into cheese mixture until blended. Soak savoiardi by very quickly dunking them into the brewed espresso, 1 or 2 seconds. In a deep dish pan, add a layer of soaked savoiardi, then layer cheese mixture and repeat until all savoiardi have been used. Sprinkle final layer with cocoa. Refrigerate for 2 hours. Serves 6-8.
