Cook the sausage patties in a skillet over medium heat until they are browned and cooked through. This typically takes about 5-7 minutes per side, depending on the thickness of the patties. Once cooked, set them aside on a plate lined with paper towels to absorb any excess grease. While the sausage is cooking, heat a non-stick skillet over medium heat. Crack the eggs into the skillet, taking care not to break the yolks, and fry them until the whites are set but the yolks are still runny. This usually takes about 2-3 minutes. Once done, remove the fried eggs from the skillet and set them aside. Slice the brioche rolls in half horizontally. Assemble the sandwiches by spreading a hoagie spread on the bottom half of each roll. Top each roll with a cooked sausage patty, followed by a fried egg. Add sliced roasted peppers and a sprinkle of grated parmesan cheese on top of the fried egg. Season salt and pepper to taste. Finish each sandwich by placing a handful of arugula on top, then place the other half of the brioche roll on top to complete the sandwich. Serves 4.
