Mildly-seasoned tilapia fillets roasted with capers, olives and cherry tomatoes to bring a taste of the Mediterranean to your table.

Preheat the oven to 400ËšF. Drizzle 1 tablespoon oil onto a large roasting pan. Season fish with salt and pepper and place evenly on pan, then add olives and cherry tomatoes. Drizzle with remaining tablespoon oil, then add lemon juice, capers and parsley. Garnish with lemon slices, if desired. Cover and cook in oven for 18-20 minutes or until fish is cooked, 145ËšF internal temperature. Serves 4.
