Wicked Tuna Sandwich

A simple, healthy tuna sandwich, topped with a mixture of mustards, onion, spinach and diced cherry peppers for a little heat.

Cut the red onion into 4 thin slices and soak in water for a few minutes. Mix brown mustard with Dijon and spread evenly on one slice of pumpernickel. On other slice, evenly spread diced cherry peppers. Top with tuna, two slices red onion and spinach, then finish the sandwich with mustard spread pumpernickel slice. Repeat process for second sandwich. Serves 2.
