Preheat your skillet or griddle over medium heat. Spread a thin layer of butter on one side of each slice of sourdough bread. Assemble your sandwiches by placing 3 slices of provolone on an unbuttered side of one slice of sourdough bread. Add roast beef, pepperoncini, and giardiniera. Top with another 3 slices of provolone and cover it with another slice of sourdough bread, buttered side up. Place the assembled sandwich on the preheated skillet or griddle. Cook for 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted. Repeat this process for the remaining sandwiches. Once the sandwiches are golden brown on both sides and the cheese is melted, remove them from the heat. Slice the sandwiches diagonally and serve them hot. Serves 2-4.
