Directions
Cook the pasta according to the directions on then packaging. While the pasta is cooking, heat olive oil in a skillet over medium-high heat. Add the leeks and sauté for about 5 minutes until fragrant. Add garlic and cook 2 more minutes. Add the asparagus tips to the skillet and sauté until they are tender-crisp and lightly browned, for about 5-7 minutes. Add peas and cook an additional two minutes. Remove from heat and set aside. Once the pasta is cooked, drain it and transfer it back to the pot. Add the sautéed peas, asparagus tips, and leeks to the pot with the pasta. Pour the pesto sauce over the pasta and vegetables and stir until everything is evenly coated. Add salt and pepper to taste. Squeeze the juice of half a lemon over the pasta and vegetables. Sprinkle the grated Parmesan cheese over the top of the pasta and vegetables, and stir to combine. Sprinkle the pignoli nuts and the lemon zest over the top of the pasta and vegetables, and stir to combine. Serves 4-6.
