Cento Sunday Gravy/Sauce

A staple in Italian households, this slow-simmered ragu is made with crushed tomatoes, spare ribs, sweet Italian sausage and meatballs and can be served with your favorite pasta.

In a large pan, heat 2 tablespoons oil over medium heat. Brown ribs on both sides, about 3 minutes per side, and remove from pan. In an 8-quart pot, heat remaining oil over medium heat. Add onion and cook until translucent. Pour tomatoes into pot, adding water if necessary to reach desired consistency. Bring sauce to a boil, reduce to a simmer and cover. In the pan used to brown ribs, fry sausage until browned on all sides. Place sausage and meatballs in sauce, and after 45 minutes add ribs, salt, pepper and basil, stirring occasionally. Let sauce cook for an additional 45 minutes, then pour over 2 pounds of your favorite Anna Pasta.
