Preheat oven to 375°F. In a large oven-safe baking dish, combine uncooked gnocchi and vodka sauce, stirring to coat evenly. Add a splash of water if necessary to coat gnocchi. Top with mozzarella cheese chunks and sprinkle with panko breadcrumbs. Drizzle olive oil over the top. Bake uncovered for 15â-20 minutes, until the cheese is melted and bubbly and the breadcrumbs are golden brown. Remove from oven and top with Parmesan cheese. Garnish with fresh basil before serving.
