Directions
Melt butter in a medium pan over medium heat. Add half of the basil, waiting until it begins to sizzle, then add tomato paste. Sauté for one minute, breaking down the paste with a wooden spoon. Deglaze with vodka and let cook for 1-2 minutes. Add cream. Bring to a boil, then simmer until sauce coats the back of the spoon, about 3-4 minutes. Add cheese. Season with salt and pepper, to taste, then add remaining basil. Toss with your favorite Anna Pasta and serve. Serves 4

- 3 tbsp Butter

- 1/4 cup Vodka, optional
- 2 cups Heavy Cream
- 2 tbsp Pecorino Romano, grated
- 1/2 tsp Cento Fine Sicilian Sea Salt, to taste
- 1/2 tsp Cento Ground Black Pepper, to taste
