Quality begins with the tuna itself. After being caught, the fish are cleaned and prepared under applicable food-safety and manufacturing requirements. The tuna loins are then carefully evaluated and selected according to Cento’s standards for flavor, color, consistency and texture.
Once selected, the tuna is packed and commercially sterilized to create a shelf-stable product while preserving its natural characteristics. Seafood processors must follow applicable U.S. Food and Drug Administration requirements, including Seafood Hazard Analysis and Critical Control Point regulations designed to identify, prevent and control potential food-safety hazards.
