7 oz Bellino Savoiardi (Lady Fingers)
3 large eggs
8 oz Mascarpone Cheese
8 tbsp sugar
8 oz Bellino Espresso Coffee, brewed
1 oz powdered cocoa

Separate egg yolks; reserve egg whites in seperate bowl. Mix the yolks with sugar until soft and creamy. Beat egg whites until stiff. Mix egg whites with yolk mixture. While stirring, gradually add cheese. In a deep dish pan, add a layer of Savoiardi and cover with coffee. Cover Savoiardi with a layer of cheese mixture and repeat until all Savoiardi have been used. Sprinkle final layer with cocoa. Refrigerate for 2 hours. Serves 6-8.
