For generations, home cooks and professional chefs learned to prepare sumptuous recipes by watching mom, grandma, great grandma, and so on. Keeping with tradition, Cento Fine Foods launched Accademia dei Cento Grandi Cuochi—The Academy of one Hundred Chefs. Our web-TV cooking show is your virtual entrée into the Cento Fine Foods research and development kitchen. Each show features a chef preparing a unique dish with products from our proprietary brands: Cento, Anna, Bellino, Ferrara, La Florentine, Little Gina's and Maurizio Pasta.

Joe Castleforte is Chef Cento, aka Giuseppe, aka Cas. Legend has it he was born in the kitchen—the downstairs kitchen—and was put to work almost immediately.
Seriously, Joe was born and raised in Bensonhurst, the "Little Italy" of Brooklyn, New York. Joe is a descendant of a long line of chefs from Naples, Italy. His family has owned a series of restaurants in New York and New Jersey. Not long after his birth, at age seven, Joe really did begin working in the kitchen, starting out as a dish washer and advancing to chef. He learned from the best, his Nonna.
